Today’s haul includes juicy local  mangoes, a huge bunch of chives and freshly picked tomatoes.  By choosing local and organic, I’m not just nourishing myself but also investing in healthier soil and a thriving ecosystem. I first tried this dish when I visited Tokyo many years ago. The chef enthusiastically prepared the dish on a hot plate in front of us. 
It’s a very simple dish, usually made with eggs as the binder. It was served with Japanese mayonnaise and a fruity tamarind sauce. 

I like to eat it the Japanese way (minus the eggs) for breakfast, but for lunch or picnics I like to add the tahini dip to turn in into something more spectacular. 

The pancake. 
A handful of 5 different veggies, finely sliced. I like to prep mine the night before to make lunch prep as quick as possible. 
1 grated garlic clove. 
As much grated fresh ginger as you like. 
Pinch of sea salt. 
Third cup rice flour. 
Half cup wheat flour. 
Drizzle of coconut oil. 

Bake in air fryer or shallow fry for 12-15 minutes. 

Dip
1 lemon - juiced. 
1 tablespoon tahini. 
1 tablespoon olive oil. 
1 tablespoon (or more) of cold water. 
BIG Pinch of sea salt. 
Sprinkle of; nigella seeds, dried dill, red sumac, smoked paprika. 
Drizzle of olive oil. 
Pomegranate seeds and chopped fresh mint to decorate. 

The smoked tofu is from @aldiuk . It has a really nice texture and tastes great eaten straight out of the packet - no prep needed - it’s great in a sandwich. 

For breakfast tomorrow, I will eat the leftover pancake from today with some miso soup. 

Eating meals like this will keep me feeling full from 2pm today until 8am tomorrow. The secret to not feeling hungry, is eating lots of fibre rich, fresh veggies and fruit.

My weight fluctuates, and I can feel my jeans getting a bit snug, I’m on a mission to eat more veg and move more so that I don’t need to buy a bigger size.

Fasting at 58 - 4 years in. 

It’s been a while since I posted one of my meals, but a photo reminded me today that it’s been 4 years since I started intermittent fasting age 54. I’m still fasting 4 years later age 58. This is the type of meal I prep to keep me feeling satiated for the 18 hours I fast per day. 

The tofu takes 10 minutes to cook - tha tea all! 

Cut tofu into bite sized pieces. 
Sprinkle with tandoori powder (from the Indian food store). 
Drizzle with coconut oil. 
Add sliced onions and crushed garlic. 
Sprinkle with sea salt. 
Fry or air fry for 8 minutes. 
Add a drizzle of maple syrup. 
Cook for further 2 minutes. 

The sweet potato was baked and mashed - nothing added. 
The sauce was ready roasted red bell peppers (from the Greek food section) blended with olive oil. 

My meals are easy to make and take no time at all. Tastes good cold too. 

This will keep me feeling full until breakfast tomorrow. Eating this way made it easy to keep my weight in check and I enjoy not having to think about food 3 times per day. 

Now the heat of summer is ebbing away, I can spend more time in the kitchen. So stay tuned for more meal ideas.
