• 5 cod fillets
• 1 tablespoon curry powder
• 1 cup coconut milk
• 1 tablespoon yellow Thai curry paste
. 1 teaspoon tomato paste
• Salt & pepper, to taste
• 1 onion, chopped
• 1 cup cherry vine tomatoes, halved
• Fresh cilantro, for garnish

Instructions
1. Season the Cod
Lightly season the cod pieces with salt and pepper. Set aside.
2. Sauté the Onion
Heat a pan over medium heat with a small amount of oil.
Add the chopped onion and cook for 3–4 minutes until soft and translucent. Add tomatoes and cook for 2-3 minutes until tomatoes are tender.
3. Add Spices & Paste
Stir in the yellow Thai curry paste and curry powder.
Cook for about 1 minute until fragrant.
4. Create the Sauce
Pour in the coconut milk and stir well.
And bring to a gentle simmer.
5. Cook the Cod
Nestle the cod pieces into the sauce.
Cover and simmer for 6–8 minutes, or until the cod is cooked through and flakes easily.
6. Finish & Garnish
Remove from heat and garnish with fresh cilantro.

• 2–3 sprigs fresh rosemary
• ½–1 cup cranberries
• 1 orange, sliced
• 1 blood orange, sliced

Instructions
1. Add all ingredients to a medium or large pot.
2. Fill with water until everything is just covered.
3. Bring to a gentle boil.
4. Reduce to low simmer and let it work its magic.

For the Chuck Roast
• 4 pounds chuck roast
• Salt and pepper

For the Braise
• 1 large red onion, sliced
• 8 garlic cloves, sliced
• 1 tablespoon tomato paste
• ½ teaspoon garlic powder
• ½ teaspoon onion powder
• 1 teaspoon Italian seasoning
• ¼ teaspoon chili powder
• Salt and pepper, to taste
• 1 cup red wine
• 2 cups beef bone broth
• 1 pound carrots, cut into chunks
• 1 pound baby (or butter) potatoes, cut into chunks
• 2 bay leaves
• 2 fresh sprigs rosemary

Directions
1. Preheat the oven to 300°F (150°C).
2. Season the roast generously with salt and pepper on all sides.
3. In a large Dutch oven, heat oil over medium-high heat and sear the roast on all sides until deeply browned, about 2–3 minutes per side. Remove and set aside.
4. In the same Dutch oven, add the sliced onions and cook until softened and translucent.
5. Add the garlic, tomato paste, garlic powder, onion powder, Italian seasoning, chili powder, salt, and pepper. Cook until fragrant, about 1 minute.
6. Add the red wine and deglaze the pot using a wooden spatula, scraping up the browned bits.
Pour in the beef broth and return the seared roast to the pot.
7. Cover the Dutch oven with a lid and braise in the oven for 2 hours.
8. After 2 hours, uncover the pot and add the carrots, potatoes, bay leaves, and rosemary or thyme.
Return to the oven, and cook 1 more hour, or until the beef is fork-tender and the vegetables are soft.
