It also works well for dinner any day. All the flavour, flaky pastry, and Caribbean soul made as a main centerpiece. This one’s about bringing culture to the table in a way that feels special and effortless 💛

RECIPE

🌱 4 cups soy slices/chunks
🌱 1 jar butter beans (jarred, with liquid)
🌱 1 medium carrot, diced
🌱 1/3 cup peas
🌱 1 onion, sliced
🌱 1 spring onion, finely sliced
🌱 3 garlic cloves, crushed
🌱 1/4 scotch bonnet pepper, minced
🌱 1/2 green pepper, diced
🌱 4 tbsp curry powder
🌱 1 tsp smoked paprika
🌱 1 tsp onion powder
🌱 1 tsp allspice
🌱 1 tbsp fresh thyme leaves
🌱 1 tbsp nutritional yeast
🌱 1 cup coconut milk
🌱 1 cup water
🌱 Oil for frying
🌱 Salt and pepper to taste

For the Topping:
🌱 1 sheet puff pastry, shortcrust pastry, or patty pastry
🌱 Plant milk for brushing

Method:
1. In a large bowl, add the soy slices/chunks, cover with water and let sit for 15 minutes.
2. In your cast iron skillet, heat oil over medium heat. Add onion, garlic, and spring onions. Sauté until fragrant, about 3 minutes.
3. Add the curry powder and cook for a few minutes. Then stir in smoked paprika, onion powder, and allspice.
4. Drain the rehydrated soy chunks and add to the skillet. Cook for a few minutes to let spices infuse.
5. Add scotch bonnet, green pepper, diced carrot, and butter beans with their liquid from the jar. Mix well.
6. Add 1 cup water. Cover and simmer 5 minutes over medium heat.
7. Stir in 1 cup coconut milk, 1 tbsp nutritional yeast, 1 tbsp fresh thyme leaves, and 1/2 cup peas. Cook 5 more minutes. Season with salt and pepper to taste.
8. Cool slightly while you prep the pastry. Cut leaf shapes from your pastry sheet.
9. Arrange pastry leaves on top of curry, brush with plant milk, and bake at 375°F for 25-30 minutes until golden.

I'm using jackfruit as the base and adding different sources of plant protein:

✨ Butter beans replace potatoes → 4x the protein + 3x the fibre (great when cooking with jackfruit which isn’t high in protein)
✨ Crispy tempeh clusters on top → gut-healthy ferments + plant protein + textural contrast

THE RESULT:
Same nostalgia, plant-based nourishment. For those ready to enjoy the festive season with culture and leave the table feeling nourished.
