A very good winter salad
Hearty and filling. Roasted spiced veg, kale, crunchy almonds and sweet dates, all pulled together with a spicy chilli and miso dressing.

Ingredients (serves 6) 
4 medium carrots, cut into chunks
3 medium beets, cut into wedges
100g cavolo nero (Tuscan kale), chopped
200 g cooked pearl barley
240 g drained and dried chickpeas (from a standard tin), keep 70 g for the dressing
1 tsp paprika
1 tsp cumin
2 tbsp honey
A handful of toasted almonds
½ crisp pear, finely julienned
6 dates, chopped
100 g goats’ cheese, crumbled
Olive oil
Salt and black pepper

Heat the oven to 200°C / 400°F.
Add the carrots, beets and chickpeas to a large roasting tray. Drizzle with olive oil and season with paprika, cumin, salt and pepper. Toss well.

Roast for 35 to 45 minutes, giving everything a shuffle halfway through. With 5 minutes to go, drizzle the honey over the carrots and beets and return to the oven.

Dressing
70 g chickpeas
1 red chilli, to taste
1 tbsp white miso (taste first and adjust if needed)
1 garlic clove
5 tbsp olive oil
3 tbsp balsamic vinegar
Water or chickpea water, to loosen

Blend everything in a high-speed blender until smooth. Loosen with water or chickpea water until pourable, then season to taste.

To serve
Combine the roasted vegetables, chickpeas, pearl barley, cavolo nero, pear, almonds, dates and add the dressing and mix well. Serve on platter and sprinkle over the goats cheese.
