I made a plan this week of what we want to be eating this summer once the sun comes out.

Once I had the plan, did the shop I got stuck into the prep 🙌

🍔 Juicy Beef Burgers
We LOVE burgers, and this recipe is so easy but incredibly juicy using Bord Bia Quality Assured Irish mince. I made a triple batch so I’d have extras to freeze for another day.

🍗 BBQ Chicken
Such an easy meal prep staple. I doubled the recipe so there’s plenty ready to go (and some for the freezer).

🥔 Lemon & Spring Onion Potato Salad
Super quick to make and keeps for up to 3 days in the fridge.

🍞 Super Soft Bread Buns
Makes 16 – perfect for smaller burgers.

🥕 Carrot Salad
500g grated carrot, 1 tsp ground cumin + some leftover dressing from the potato salad = done ✔️

🥗 Prepped Sides
Tomato, cucumber, onion all chopped and ready, plus a quick burger sauce (ketchup + mayo + mustard). So handy to have everything ready to go!

Makes 4 approx
🍉2 cups watermelon - diced
🍓1 cup strawberries - washed, halved 
🍋optional: Juice 1/2 lemon or lime 
(sweetened with maple/honey if you like) 

Blend, freeze overnight, pop out, enjoy

💡 Tip 1: Make a plan – include something for everyone
My 5 bowls (small → large):
1️⃣ Sweet drop peppers – zingy & delicious
2️⃣ Smooth hummus (recipe below)
3️⃣ Crunchy croutons – kid fave!
4️⃣ Simple pasta salad – 250g pasta + pesto + cherry tomatoes + cucumber
5️⃣ Green salad – peppers, red onion, cubed feta
a jar of honey mustard dressing:
1 cup neutral oil, ⅓ cup cider vinegar, 2–3 tbsp Dijon mustard, 2 tbsp honey, salt & pepper – shake well & adjust to taste

🥣 Chickpea Hummus
240g chickpeas (drained)
2 tbsp tahini
2–3 tbsp lemon juice
1 tsp ground cumin
1 garlic clove (grated)
2–4 tbsp boiling water
2 tbsp olive oil
¾ tsp salt
Blend tahini + lemon first.
Add garlic, salt, cumin & chickpeas. Blend.
Slowly add boiling water until smooth + fluffy.
Taste & adjust. Finish with olive oil.

🥖 Croutons
½ loaf cob bread (day-old works best)
Cut into cubes, spray with oil
Air fry 12 mins at 170°C (shake halfway)
Easy, fresh, and ready for anything 🌿

💕Raspberry and Banana Muffins: makes 24 

400g self raising flour (or 400g plain flour & 2 tsp baking powder)
100g oats (or add more flour instead)
160g sugar - white or coconut 
2 tsp bicarbonate of soda
200g melted butter- allow to cool (or 200ml veg oil)
200ml milk of choice 
4 eggs
1 tablespoon of white vinegar or lemon juice
2 bananas mashed (or 2 peeled and grated apples)
1 cup frozen raspberries -125g 
(I added 1 jumbo choc chip to each muffin..optional)

1.Preheat the oven 180°C.
2.Line 2 muffins tins with paper cases.
3.To the mixing bowl add the self raising flour, oats, sugar and bicarbonate of soda, mix really well.
4.Melt the butter in a jug and allow it to cool for a while. Then add the milk, eggs and vinegar whisk well.
6.Pour the milk mix into the mixing bowl with the mashed bananas and frozen raspberries. Top with a jumbo chocolate chip or a frozen raspberry. Gently mix and scoop into the muffin cases.
Bake in the oven for 20-25 minutes. Always check with a cocktail stick, when it comes out clean they’re ready.

Storage: Keep in an airtight container for 3 days. 
Freezer: Cool and bag up for the freezer, good for 3 months. Defrost in an airtight container on the counter for 1-2 hours.
