Warming up with Kashmiri aloo mutton (alve te maaz) using dad’s potatoes from the garden. This is a dish my friend and previous Heritage guest, Andleeb recommended I try. It only uses a handful of ingredients and reminds me of classic home cooking. The full recipe video is on my YouTube, the recipe doesn’t belong to me, I have linked the recipe I used for reference in the caption on YouTube 😊 below is how I made it:

1. Peel and shallow fry potatoes in oil until golden. Once golden, place in bowl lined with tissue and set aside 
2. In a medium saucepan, add a tbsp of ghee and place on a medium heat 
3. Add 4 cloves garlic, roughly sliced 
4. After a couple of minutes add the diced lamb and cook for a couple of minutes, getting some caramelisation on the lamb 
5. Stir in the potatoes 
6. Add 1 tsp each turmeric powder, Kashmiri chilli powder, crushed fennel seeds and salt. Stir to combine 
7. Add chicken stock (or whichever stock you have) - just enough to almost cover the ingredients 
8. Bring to a simmer, reduce the heat and cover with a lid. 
9. Gently simmer until lamb is tender 
10. When tender, add about 1 tsp fenugreek leaves (kasoori methi) and cook for a further minute or so before removing from the heat
