Creamy Chicken Alfredo Jacket Potato Tray Bake
Serves 4

Ingredients

Jackets
4 large baking potatoes
Olive oil spray
Sea salt and black pepper
40g butter

Chicken
600–700g chicken tenders or 3 large chicken breasts
1–1½ tsp adobo seasoning
1 tbsp mixed herbs
Salt and black pepper
Olive oil
20g butter

Alfredo Sauce (made in the same pan)
2 garlic cloves, finely chopped
300–350ml double cream
1 tbsp cream cheese
Black pepper
40–50g grated Parmesan
50g garlic and herb mixed cheese

For layering
150–200g mozzarella or mixed cheese
Extra grated Parmesan for topping

Method
	1.	Cook the jacket potatoes
Pierce the potatoes, rub with olive oil and salt.
Air fry at 180°C for 45 minutes, then cook another 10 minutes until crispy.
Oven option: 200°C for about 1 hour.
	2.	Cook the chicken
Season the chicken with adobo, mixed herbs, salt and pepper.
Pan-sear in olive oil until golden and cooked through.
Add butter and baste for extra flavour.
Remove from the pan, rest, then cut into bite-size pieces.
	3.	Make the Alfredo sauce
Lower the heat and add the chopped garlic to the same pan. Cook for about 30 seconds until fragrant.
Pour in the double cream and season with black pepper.
Stir in 1 tbsp cream, Parmesan and garlic and herb mixed cheese.
Simmer gently until smooth and creamy.
	4.	Assemble the tray bake
Place all 4 crispy jackets into a large tray.
Slice open and gently mash the centres with butter, salt and pepper.
Add a first layer of mozzarella or mixed cheese.
Scatter over the chicken.
Spoon the Alfredo sauce generously over everything.
Finish with more cheese and a generous grating of Parmesan.
	5.	Final melt
Bake at 180°C for 10–12 minutes
or air fry at 180°C for 4–5 minutes
until golden, bubbly and irresistible.

🌮 Loaded Fajita Jacket Potatoes (Serves 2)

Ingredients

Potatoes
• 2 large baking potatoes
• Olive oil spray, sea salt, butter, black pepper

Chicken Fajita Filling
• 350g chicken thighs, sliced
• 1 tsp each adobo, garlic powder, smoked paprika
• 1 tbsp fajita seasoning
• 1 tbsp chipotle paste
• Juice of ½ lime
• 1 tbsp olive oil

Veg
• 1 red pepper + 1 yellow pepper, sliced
• 1 onion, sliced
• ½ tsp fajita seasoning
• ½ tsp smoked paprika

Spicy Cheese Sauce
• 25g butter
• 20g flour
• 250ml milk
• ½ tsp taco seasoning
• ½ tsp Dijon mustard
• 80g grated cheese (mozzarella / chilli cheese / Red Leicester / garlic cheese – mix it up!)

To Serve
• Guacamole
• Sour cream
• Fresh coriander
• Tajín or chilli flakes
• Lime wedges

Method

1️⃣ Potatoes
Microwave for 6 minutes. Rub with oil + salt, wrap in foil and bake at 205°C for 45 mins. Unwrap and️nd return to oven for 10 mins to crisp.

2️⃣ Chicken
Toss chicken with spices, chipotle, lime juice + olive oil. Air fry or pan-fry for around 15 mins until golden and cooked through.

3️⃣ Veg
Fry peppers + onion with fajita seasoning and smoked paprika until soft with lovely charred edges.

4️⃣ Cheese Sauce
Melt butter, stir in flour, then slowly whisk in milk. Add taco seasoning, Dijon + cheese. Stir until silky smooth.

5️⃣ Assemble
Split potatoes and mash the inside with butter + a little cheese.
Layer: cheese sauce → chicken → peppers → more cheese sauce.
Finish with guac, sour cream, coriander + Tajín. Serve with lime wedges.
